FrenchJackpotChef began with a question: what should a coastal restaurant feel like after the last plate leaves the table?
Chef Mara Bell and host Adrian Cole created a dining room where food, service and late conversation belong to the same rhythm. The kitchen draws from Mediterranean shorelines without pretending Brighton is anywhere else.
Local fish, South Downs meat and Sussex vegetables meet olive oil, preserved citrus, saffron and open flame. The adjoining salon opens later for adult guests who choose to continue with responsibly hosted table games.
